Selection and direct press until to obtain the 50% of the best juice. Dewatering at low temperatures for 48 hours. Fermentation at low temperature with selected yeasts during 15 days. With extreme care of the oxygen it is clarified and filtered for bottling preserving all its aromatic potential.
